  1. Wash the fish fillet and put it in a kitchen tissue to dry a little.
  2. Cut it into bite size pieces.
  3. Marinate it with half teaspoon salt, half teaspoon of flour and two tablespoon of oil for about 20 minutes.
  4. Peel off celery skin and cut it slide ways.
  5. Pound garlic and cut ginger into thin slices.
  6. While the fish marinates for 20 minutes the ingredients should be cut and ready to cook.
  7. Heat the remaining cooking oil in a wok and shallow fry the fish fillet. Set it aside for later.
  8. After frying the fish fillet, use the same oil to stir fry garlic and ginger till golden brown.
  9. Add the celery and stir fry for a minute. Add a little water and salt. Cook it until celery is soft enough to eat. (As per your liking)
  10. Add the fried fish fillet in it add sugar and let it simmer for 2 minutes with the lid on.
  11. Mix corn starch and water in a bowl and add it to the wok to make a creamy sauce. Stir it for a bit and your dish is ready to eat.
  12. Serve it while its hot with rice.
