Pumpkin with Spare Ribs - For Pumpkin Lover out there, this simple dish is for you! Healthy food and easy way to cook. Since pumpkin is rich in Vitamin A, it is considered to be very good for the eyesight.
First marinate spare ribs with 1tbsp soy sauce, 1tbsp sugar, 1tbsp oil and leave it for like 10mins.
Remove skin of the pumpkin and cut it into bite size. Then wash.
Pound the garlic.
Heat 2 tbsp oil in a wok and put garlic, stir a bit.
Add spare ribs, stir fry it for 5 minutes
Add a quarter cup water. Cover it, and let it cook on slow fire.
After the spare ribs half way cook, put the Pumpkin and stir it, then cover the wok for 5 minutes on slow fire.
Check after 5 minutes if the pumpkin is already soft (depends how soft you like it). If not yet soft, add a little water and cook for a few minutes more till it is soft enough. (Take caution not to add too much water).
If already soft add 1 tbsp soy sauce and black beans and 1 tbsp sugar and stir well. Cover it for another 5 minutes.
Serve hot with rice.
